Proper handling and storage of fresh meat is critical not only for culinary excellence but also for household food safety. In tropical climates like central India, understanding temperature management is essential for preserving the tenderness and microbiological safety of your cuts.
1. The Food Safety Temperature Zone
Bacteria multiply most rapidly between 5°C and 60°C (the “Danger Zone”). When fresh meat is purchased from roadside vendors and sits in ambient heat during a 45-minute commute home, surface bacteria can double every twenty minutes.
This is why Everfresh delivers in fresh insulated bags with cold gel ice packs. The moment your delivery arrives, your cold chain has been maintained uninterrupted from our processing facility to your kitchen.
2. Short-Term Storage (Within 24–48 Hours)
- Store in the Coldest Zone: Place the unopened meat pouch in the meat chiller compartment or the bottom shelf of your refrigerator (typically 1°C to 3°C).
- Keep Sealed: Do not wash raw meat before refrigerating. Excess surface moisture accelerates bacterial growth. Leave it in its sealed food-grade packaging until you are ready to cook.
- Cook Timelines: Fresh poultry should ideally be cooked within 24 to 36 hours. Fresh goat mutton can remain refrigerated in peak condition for up to 48 hours.
3. Long-Term Freezing Best Practices
If you do not plan to cook your fresh meat within 48 hours, freeze it immediately while it is in prime condition.
- Portion Before Freezing: Divide your meat into single-meal portions rather than freezing a 1 kg block together. Repeatedly thawing and refreezing meat severely degrades texture.
- Use Airtight Freezer Bags: Squeeze out all excess air to prevent freezer burn (surface dehydration caused by dry freezer air).
- Safe Thawing: Never thaw frozen meat on the kitchen counter at room temperature. The safest method is overnight thawing in the refrigerator, or submersing the sealed bag in a bowl of cold water.
